Imagine a combination of fluffy batter, warm cinnamon-spiced apples, and pleasantly crunchy walnuts in every bite. This baked pancake will fill your entire home with the scent of cardamom and maple syrup. It tastes absolutely fantastic both with Greek yogurt and on its own.
For the base, we will need:
- 400 ml semi-skimmed milk
- 200 g of fine spelt flour
- 80 g walnuts
- 60 ml maple syrup
- 6 eggs
- 4 apples
- 1 tbsp coconut oil
- 2 tsp of cinnamon
- ½ tsp of cardamom
- a pinch of salt
For serving, we will need:
- 10 g of powdered sugar (can be substituted with maple syrup)

Preparation:
Start by preparing the base. Dry-roast the walnuts in a pan and set them aside. Peel the apples, remove the cores, and cut them into thin slices. Heat the coconut oil in a large pan and fry the apples. After a while, add 1 tsp of cinnamon, cardamom, and 30 ml of maple syrup, and mix everything well. Finally, add a splash of water and simmer the apples until soft.

Mix the flour with a pinch of salt, add the eggs, milk, remaining maple syrup, and cinnamon. Blend into a smooth batter using a hand blender. Line a 27×34 cm baking tray with parchment paper and place the apples on it. Pour the batter over them and then sprinkle with the walnuts. Bake the pancake at 180 °C for approximately 30 minutes. Let it cool at least partially before cutting, and serve sweetened with powdered sugar (or maple syrup). It’s especially delicious with Greek yogurt.
