Fitness Recipe: Chicken Gyoza Dumplings

Asian gyoza dumplings represent the perfect combination of soft dough and juicy chicken filling with a high protein content. Thanks to their simple preparation and balanced nutritional values, they are ideal as a light lunch or a stylish fitness dinner.

For the dough, we will need:

  • 200 g fine spelt flour
  • 130 ml boiling water
  • a pinch of salt
  • starch as needed for rolling out the dough

For the filling, we will need:

  • 100 g Chinese cabbage
  • 2 cans of chicken breast
  • 2 spring onions
  • 3 cloves of garlic
  • 5 cm piece of ginger
  • 2 tbsp soy sauce

Instructions:

Mix the flour with a pinch of salt. Slowly pour in the boiling water and stir the dough with a wooden spoon. Then knead it by hand until smooth and non-sticky mass is created. Cover the dough with a cloth and let it rest for 30 minutes.

Meanwhile, finely chop the Chinese cabbage, spring onion, garlic, and ginger. Add the soy sauce and drained chicken breasts, and mix everything thoroughly by hand. Prepare the sauce by combining sweet chili sauce, soy sauce, and rice vinegar.

Next, start preparing the dumplings. Roll out the rested dough on a board with a little starch until very thin (it can be almost translucent). Use a glass to cut out circles from the dough, place 1 tsp of chicken filling in the center of each circle, brush the edges with a little cold water, press them together, and form a dumpling. You can decorate the edges by pressing with a fork or by hand-pleating the edges, but it is not necessary.

Chicken Gyoza Dumplings - Preparation

Pan-fry the gyoza dumplings brushed with oil until crispy, and then steam them for another 5–7 minutes in a steamer (if you don’t have one, a colander is a great choice). Sprinkle the finished dumplings with about ¾ of the prepared sauce and serve. You can serve the gyoza dumplings sprinkled with sesame seeds and spring onion, and dip them into the remaining sauce.
