Fitness Recipe: Breakfast Shakshuka

If you’re looking for a way to spice up your morning with something warm and nutritious, this breakfast shakshuka is spot on. We will need:

  • 400 g canned peeled chopped tomatoes
  • 100 ml of water
  • 4 eggs
  • 2 small bell peppers
  • 2 cloves of garlic
  • 1 onion
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 teaspoon ground paprika
  • ½ tsp ground smoked paprika
  • ¼ tsp ground cinnamon
  • ground pepper to taste
  • ground chilli to taste
  • salt to taste

For serving, we will need:

  • a handful of fresh cilantro
  • whole-grain bread to taste

Preparation:

Slice the onion into half-moons, finely chop the garlic and sauté until translucent in oil. Add bell pepper cut into thin strips, ground paprika, smoked paprika, ground cumin, ground cinnamon, chilli and let it release its aroma briefly. Pour in the chopped tomatoes, water, and season with salt, ground pepper and simmer for a few minutes.

Breakfast Shakshuka - Sautéing vegetables with spices

Crack the eggs into the pan with the tomato mixture, season them with salt, cover the pan with a lid and simmer for about 5-6 minutes. The egg whites should be firm, while the yolks can be slightly jiggly. Serve the shakshuka sprinkled with chopped cilantro and with whole-grain bread.
