A sweet treat full of protein is an ideal addition to your breakfasts or snacks. Today, we’ve decided to give our protein bread a little twist by adding apples and kefir. The result is a beautifully moist delight that you won’t want to stop eating. It tastes amazing on its own but can be elevated with some nut butter, yoghurt, or quark.
Ingredients:
- 250 g apples
- 200 g wholegrain spelt flour
- 100 ml kefir milk
- 80 g erythritol
- 50 g walnuts
- 50 g vanilla protein powder
- 2 eggs
- 2 tsp cinnamon
- 2 tsp baking powder
- spray oil for greasing the tin

Method:
Start by peeling the apples, cutting them into quarters, removing the cores, and grating them coarsely. Transfer the grated apples into a large bowl, then add the kefir milk, both eggs, and erythritol. Mix everything together. In another bowl, combine the dry ingredients: flour, protein powder, cinnamon, and baking powder. Gradually mix the dry ingredients into the wet mixture until you have a smooth, compact batter.

Now, fold in ¾ of the chopped walnuts, keeping the rest on the side. Pour the prepared batter into a loaf tin greased with spray oil, and sprinkle the remaining walnuts on top. Place the bread in a preheated oven at 180°C and bake for around 45 minutes. Check with a skewer to see if it’s done—if not, give it a bit more time. Once baked, leave it to cool before diving in!
